Aimee Song inspired RAW BARS

I was kind of going back and forth on whether I should post this because I felt like I was stealing Aimee’s recipe. But I got so many questions after making them the other night on the exact amount of everything I used to make mine, that I decided to just do it, and post my recipe for her RAW BARS.

I had to watch her You Tube video a couple of times to see how she made them and how much of everything she used, since she made hers by ratios.  The first time I made them they were super BOMB but I think I needed a little more dates so they could stick together better.  So after testing these out a few times I think I finally got it down!

AIMEE SONG’S RAW BARS

Ingredients:

1 1/2 cups Quick Oats

1/4 cup Chia Seeds

1 1/2 TBSP Sunflower Seeds

1/2 cup Walnuts (chopped)

1/2 cup Coconut Oil

1/4 tsp sea salt

pinch of black pepper

18 Dates (pitted and chopped)

Coconut Flakes (add as much as you like)

Directions:

Preheat oven to 350 degrees.  Mix oats, chia seeds, sunflower seeds, walnuts, salt, pepper, and coconut oil until everything is combined well (I use my hands).

Put on a parchment lined baking sheet and spread out.  Bake for about 18 minutes or until golden brown. Mix about half way through baking time.

While waiting for the oat mixture to bake, pit and chop dates and place in a large bowl.  When the oats are done let cool for about 15 minutes.

Add cooled oat mixture to the bowl of dates and mix well.  You have to kind of smash the dates with the oat mixture to make sure everything is combined evenly.  You might have to use your hands, but it’s the best way to do it!

Once combined, line a baking dish with parchment paper and add the raw bar mixture.  Press down pretty hard on the mixture because you want the raw bar to be packed tightly.  Add coconut flakes and lightly press it into the raw bar.

Wrap dish with saran wrap and place into the freezer for about an hour before cutting.

You can wrap each raw bar individually or leave in the dish, just make sure the dish is tightly covered/wrapped.  Keep in refrigerator.

I hope everyone loves these raw bars as much as I do.  They are super nutty and the perfect amount of sweetness from the dates!
