Breakfast Burritos

Hi guys!!

Back with another easy recipe to help out with busy mornings.  I used to hardly eat breakfast but these days, when i’m up by 6:00 am to get Cody ready for school, breakfast is a must.  I usually eat something small with my coffee but then by 9:00 am i’m usually hungry again.  Having stuff around the house for breakfast is always a must for us.  Whether its cereal, granola bars, toast, muffins, or my BOMB ASS breakfast burritos.  If I have time I will usually prep/make these in the beginning of the week and put them in the fridge to reheat for breakfast or even sometimes lunch for the week.  Not that these will even last a week ..


10-12 tortillas (I prefer Tortilla Land brand)

8 organic eggs

5 slices of turkey lunch meat (I usually use this when we have some about to expire)

1 bag of organic frozen hashbrowns

1 tbsp salsa

olive oil



1 tsp chili powder

1 tsp garlic powder


Warm tortillas one by one and set aside.  Whisk eggs, salsa, and pepper to taste.  In a warm skillet add some olive oil and the chopped turkey meat.  Cook for a few minutes and move to one side of the pan.  On the empty side of skillet add the eggs and cook.  Mix the turkey and eggs together till eggs are a soft scramble.  Remove from skillet and set aside.  Add more olive oil to the pan and add the whole bag of frozen hash browns.  Add salt, pepper, garlic powder, and chili powder.  Mix together, pack it down and let them cook till brown and crispy.  Flip over once to brown the other side.  Add egg and turkey back into the pan, turn off fire, and mix everything together.  Time to wrap your burritos.  I usually add about 3 tbsp of filling into each burrito.  Serve warm with your favorite salsa!

These usually don’t last the whole week in my house and they probably won’t in yours either!
