Chicken Parmesan Pizzas

I seriously think Cody and Jeff can eat pizza every week!  And although pizza night is fun, I’ve been trying to think of some other creative ways to make pizza.  Sometimes we do individual make your own pizzas with flatbread from Trader Joes.  Sometimes we do pizza on naan.  But one night while watching The Kitchen before bed, they mentioned something about using a a chicken as a base for pizza and I was like yessss!! I can definitely figure out a way to make that.  So I decided that I was going to try and make a thin chicken parmesan as the “pizza crust” and then top it with the pizza sauce, cheese, and pepperoni.

Let me tell you!  This came out amazing for me winging it and making it for the first time.  It still amazes me sometimes that I can make a recipe up in my head and actually bring it to the table AND have it taste good too!  It’ll seem like this is a really time consuming recipe but overall it’s really easy and the only reason why it took me a while, was because I had to shallow fry the chicken in batches because I could only cook 3 chickens at a time.

Let’s get this started!

Ingredients:

1 pack of organic chicken tenders (bought mine at Trader Joes)

1 cup of flour

2 eggs

3 cups of panko

3/4 cup grated parmesan

2 tsp dried basil

2 tsp dried oregano

2 tsp garlic powder

1/2 tsp salt

1/2 tsp black pepper

1 container of pizza sauce (Trader Joes in fridge section)

1 bag organic mozzarella cheese

1 pack pepperoni (without nitrates from Trader Joes)

Avocado oil for frying

Directions:

You will need to make a dredging station for the chicken.  One dish with flour, one dish with 2 beaten eggs, and one dish with the panko, parmesan, and spices.  First coat the chicken in the flour and slightly press down to flatten it a little.  Shake any excess flour off and then place in egg wash.  Cover completely in the egg wash and let any excess drip off.  Lastly, coat in panko mixture while pressing down on the chicken till it is about 1/2 in thick.  Place on a plate and continue to do this until all chicken tenders are breaded.

In a cast iron skillet heat avocado oil till about 350 degrees.  The oil level should be about 1/2 an inch deep.  I could fit 3 chickens at a time.  Cook for about 3 minutes on each side or until golden brown.  Place each batch of chicken on a wire rack so it doesn’t get soggy.  (*note: you might have to add a little more oil to your pan in-between batches) When all chickens are cooked top with sauce, cheese,and pepperoni just like you would a pizza.  Place wire rack on a baking sheet and broil on high until cheese is bubbly.  You do not want to leave it in the oven too long or the chicken will overcook and dry out.

Seems like a lot of work but trust me its really easy and its a super fun way to have pizza night.
