Cooking With Cody: Pizza Night

Hi everyone! Happy Hump Day!  I can’t believe its already Wednesday.  Sometimes the weeks seem never ending but this week seems like it went by so fast!

So, it seems that everyone has been loving our little mini series of Cooking With Cody on Snapchat and that makes us super excited & happy!!!

This weeks recipe is so easy I don’t even know why I’m posting it on here.  Homemade Pizza night is usually a fave at our house and I think Cody just loves it because he gets to pick the toppings for the pizza and he gets to make a mess while making dinner, while I get to clean everything up (lucky me).  We take a little shortcut and buy the fresh pizza dough from Trader Joes and then prep whatever toppings we feel like on our pizza for that night. Using this fresh dough really makes us feel like we are making homemade pizza from scratch!  We add all of our toppings to the pizza dough, bake and voila, DINNER IS SERVED!

We do add a few little steps to make the pizza even more delicious by adding a special seasoning blend to the crust, which you will see below.

If anyone is intimidated to cook with your kids, this is probably the easiest and most fun thing to make together!  It’s messy but Cody loves rolling the dough out and topping the pizza with his favorite toppings, which makes it all worth it!  Plus, seeing the big smile on your kids face when it comes out of the oven is priceless!

Homemade Pizza Night  (serves 8)

**All ingredients were bought at TRADER JOE’S

2 bags of whole wheat pizza dough

1 container of the refrigerated pizza sauce

2 bags of organic mozzarella cheese

1 cup  grated parmesan cheese

1 pack of pepperoni without nitrates added

All other toppings are optional and up to you

1/4 cup cornmeal or semolina flour

All purpose flour for dusting and rolling out dough

olive oil for crust

2 tbsp garlic powder

2 tbsp parmesan cheese

1 tbsp dried oregano

Directions:

Preheat oven to 475 degrees.

Flour countertop with a generous amount of flour and remove pizza dough from bags.  Sprinkle a little AP flour on dough and roll into a ball and let sit on the counter for about 30 minutes.  After 30 minutes is up, you can roll out the dough with a rolling pin or I like to just toss the dough (like a real pizza maker) until its stretched out to my liking.  Sprinkle your baking sheet with cornmeal and place pizza dough on top.

Add the pizza sauce and make sure its spread out into a thin layer.  Too much sauce will cause the pizza crust to be soggy after baking.  Then add mozzarella and parmesan cheese all over.  Top with your favorite toppings.  Remember not to overload the pizza with too many toppings because it will also make your pizza soggy.

Brush the crust with a generous amount of olive oil.  Mix garlic powder, parmesan cheese, and oregano and sprinkle the mixture on top of the crust where you brushed the olive oil.

Put it in the oven for about 10-15 minutes or until you see the cheese bubbling.

Remove and let sit for 2 minutes, slice, and serve!
