Cooking with Cody: Cheesy Turkey Taco Chili Mac

I am so excited to introduce a new series with you all!

A couple of weeks ago, Cody has all of a sudden decided he likes to cook again.  He started helping me make breakfast one day, specifically these Organic Chicken Breakfast Sausages by Amy Lu (from Costco & if you haven’t tried them, you MUST!), which he thinks are now Cody’s famous sausages.

I asked him the other morning ..

Me: I wonder if these sausages taste good because YOU made them or because they are just a really good brand of sausages?

And guess what he said ..

Cody: Because I made them, DUH! and because I made them perfectly crispy on the outside.

Since then he says he is my SOUS CHEF aka CHEF CODY aka THE SAUSAGE KING.

Last week we tested out a little mini series on my snapchat (follow me: khaye10) called “COOKING WITH CODY” and it seemed to be a hit!  So, we are going to try to do one once a week and see how it goes.  I will also try and post the recipe on here the following day so everyone can hopefully make it for dinner as well!

This recipe is so easy and it’s all done in one pot, which makes for an easy weeknight dinner and easy cleanup!

One Pot Cheesy Turkey Taco Chili Mac adapted from the Skinnytaste

Ingredients:

1-1.5 lbs organic ground turkey

1 medium onion, chopped

3 cloves minced garlic

1 bell pepper, chopped

1 can organic fire roasted tomatoes with green chilies

14.5 oz can organic kidney beans, drained

8 oz can organic tomato sauce

1/2 can (8 oz) organic refried beans

2 cups organic chicken broth

1 3/4 cups water

1 packet of Trader Joe’s taco seasoning

8 oz gluten free pasta

3/4 cup shredded cheese

2 tbsp cilantro, chopped

2 tbsp chopped scallions

Directions:

In a large dutch oven over medium-high heat add olive oil and ground turkey.  Break it up with a wooden spoon and cook until browned.  Add minced garlic, chopped onions, bell pepper, and taco seasoning.  Cook another 2-3 minutes until veggies are soft.

Add the canned tomatoes, beans, tomato sauce, refried beans, chicken broth, and water.  Bring to a boil, cover and simmer for about 10-15 minutes.

Take off lid and add uncooked pasta and let simmer uncovered for another 6-8 minutes.

Remove the pot from the heat and top with cheese.  Cover for another 5 minutes until cheese is melted and top with cilantro and green onions for garnish.

Cody decided he wanted to add some garnishes on top (turkey bacon, avocado, & sour cream) but you can definitely just eat it as is!
