Easy Weeknight Meal: Grass Fed Burgers and My Special Sauce

Let me first start off by saying: yes I work part time, yes I am a mother to one, and yes there are times I’m just too tired to cook dinner.  But, when you have an easy weeknight meal to turn to, it makes life a lot easier.  And who says a fast food burger is all you have time for tonight?  Certainly not me!  This meal can probably be done in less then 30 minutes and also be made with much better ingredients that you definitely won’t find in any fast food burger joint.  If you know me, then you know I am very into “organic is better” and I am always reading the labels on everything I buy to make sure they are only made with the best ingredients.  With that being said if you had to splurge on just one thing for this dinner please let it be the Organic GRASS-FED ground beef for the burger patties.  I am a true believer that anything that comes from an animal should always be organic and/or grass fed.

Let’s get dinner started because the more I think about this juicy burger and my special sauce oozing out between the buns, the bigger the pool of drool is getting in front of me.

FullSizeRender 20 First prep the veggies and toppings for your burgers.  I am using organic green leaf lettuce, organic vine ripened tomatoes and sliced avocados (not shown).

Slice 2 medium sized yellow onions, thinly.

Heat a cast iron skillet to about medium.  Add 1 Tbsp of grape seed oil and all of the sliced onions.  Season with salt and pepper.

Cook down until golden brown and tender.  Then set aside.

For the burger patties you will need 2 lbs of organic grass fed ground beef.  Divide the meat evenly into 8 patties (1/4 lb each) and season both sides with salt and pepper.

Heat a cast iron skillet on medium high and add 1/2 Tbsp grasped oil to the pan. Then add the patties 4 at a time.  Let the patties get a good sear on them before flipping.  DO NOT move them around or they will not form that nice brown crust that you want from a cast iron skillet.

Cook on the first side for about 2-3 minutes or until you see blood juicing out on top.  Then flip.  This is what a pretty good sear should look like.

Add cheese to top of burgers and cover them for about 1- 2 minutes, so it creates a steaming environment to melt the cheese perfectly.

For a medium burger the total cooking time should be about 5-6 minutes. The cheese should be ooeey-gooeey and melted which means the burgers are done. Repeat same steps for the next 4 patties.

Toast your whole wheat burger bun in a toaster oven.  Then add the patties, your toppings and of course don’t forget my secret sauce!  Serve with an organic dill pickle spear, some Kettle brand potato chips and some sweet juicy watermelon.  ENJOY!

You can also go bun-less which I prefer because jalapeño Kettle chips definitely took a win over a bun tonight!

Burger Ingredients:

2 lbs organic grass fed ground beef (I bought mine from Trader Joes)

Organic green leaf lettuce

2 vine ripened tomatoes sliced

2 hass avocados sliced

8 slices of colby jack cheese (omit if you have a dairy allergy like me)

2 yellow onions

8 whole wheat hamburger buns

2 Tbsp grape seed oil ( 1 Tbsp for onions/1Tbsp for burgers)

himalayan pink salt

fresh ground pepper

 

sauce ingredients

My special sauce:

1 cup mayo

2 Tbsp ketchup

 2 Tbsp yellow mustard

4-6 pickle slices (you can add more to your taste)

1/2 tsp garlic powder (not shown)

1/2 tsp onion powder (not shown)

1/2 tsp cayenne pepper (not shown)

salt & pepper to taste

Add all of the ingredients into a food processor until fully combined.  You can either make this ahead of time and leave it in your fridge for up to a week or make it the night of dinner.

So who needs to go through a drive through to get a burger??  Nobody wants to eat that crap anyways!  Spend a few extra minutes and make my homemade GRASSFED burgers any night of the week.  And don’t forget to prep your veggies the night before so it’ll save you some time the next day.
