Shrimp Fajitas

Because it’s Cinco De Mayo this week, it was the perfect time to share my fajita recipe with you.

I usually make chicken fajitas because it’s a little healthier but the other night I was feeling like shrimp.  I never made shrimp fajitas before, but they came out just as good as the chicken, maybe even better!

This is the easiest and quickest dinner especially with my shortcut taco seasoning found at TRADER JOES.

This can be served with Cilantro Lime Rice or the traditional Mexican style rice, beans, and your favorite tortillas.  It can also be made into tacos, burritos, added to salads, or even a protein bowl.

Shrimp Fajitas Recipe

Ingredients:

2 lbs. Shrimp (de-vained and tails off)

1/2 cup of olive oil

1 pack of taco seasoning from Trader Joes

1 onion sliced thinly

2 bell peppers sliced into strips ( I usually use one green and one colored)

4 cloves of garlic, minced

1 lime, zested and juiced

1 lime to juice at the end

more olive oil to cook with

Directions:

Add Shrimp, 1/4 cup of olive oil, 1/2 packet of taco seasoning, 1/2 of the minced garlic, zest of one lime, and  juice of half of lime into a Ziploc bag to marinate for about 30 minutes.

Add bell peppers, onions, 1/4 cup of olive oil, the other half of the taco seasoning, the rest of the minced garlic, and juice from half of lime into a separate Ziplock bag and let marinate for 30 minutes.

In a cast iron skillet add a few tsp of olive oil and cook shrimp in small batches.  After each batch, take the shrimp out and let it rest on a separate plate.

After all the shrimp is cooked, add a few tsp of olive oil to the same cast iron skillet and add the peppers and onions.  Cook until nicely charred.  Add the shrimp back on top of peppers and onions and garnish with cilantro.  Squeeze one lime all over the top and serve.

Serve with your fave toppings: guacamole, salsa, or sour cream.

    • Yes, I used frozen shrimp as well. Just defrost and make sure you dry them before marinating them! Leave a comment and let me know how the fajitas turned out! I really love seeing people post my recipes!
