TACO SALAD

With the weather getting a little warmer, salad is sometimes the only thing I crave (besides an ice cold drink from one of my fave boba shops) .

We had some leftover carne asada from the other night and a lot of lettuce and spinach in the fridge, so I decided why not try and get rid of some stuff before it goes to waste.  This is really simple and you can add or omit the add ons to your liking of course!

Ingredients:

Carne asada

Organic romaine, washed & chopped

Organic spinach, washed & chopped

Frozen fire roasted corn (Trader Joes)

Pico de gallo

Avocado, diced

1 can of Organic black beans (rinsed & drained)

1 can of Organic sliced black olives

Organic mexican style cheese (I like Organic Valley brand)

Cilantro, chopped

Green onions, chopped

Lime wedges

Tortilla chips, crushed for garnish

Fave hot sauce/salsa (Green Dragon sauce from Trader Joes is FIRE)

Add your romaine and spinach to a big bowl and add whatever toppings you like. I squeeze a lime wedge and pour my fave salsa and/or hot sauce all over, which is pretty much the dressing to my salad.

Easiest, healthy weeknight meal to put together and you probably have more then half the ingredients around the house.  Enjoy!
